Alila Villas Uluwatu, the luxury all-pool villa property located in South Bali, has put together an itinerary centred around food for guests of the resort. Aptly titled the Journey of Gastronomy, guests will be taken on an adventure that will captivate all five senses and tantalise their taste buds.
Guided by Alila Villas Uluwatu’s Executive Chef, Stefan Zijta, and Balinese Chef Mahendra, the Journey of Gastronomy will introduce guests to Balinese ingredients, techniques and recipes, starting with an excursion to a local marketplace and followed by a cooking class in the kitchens of Warung, Alila Villas Uluwatu’s Balinese restaurant.
The morning starts with a visit to Jimbaran Fish Market — the biggest, busiest and most famous fish market in Bali. Amidst a myriad of sights, sounds and smells, from the richly glistening produce on offer to the animated bargaining of the locals, the community comes to life in a frenzy of activity.
Taking a break from the cacophony of the morning, guests on the Journey of Gastronomy will then enjoy delectable Balinese desserts prepared by our chefs, while relaxing at the beach and enjoying a breathtaking view of the Indian Ocean, before returning to the resort. Upon arrival, they will delve into the world of Balinese cooking techniques and recipes. Guests will be taught to prepare popular Balinese dishes such as Sate Lilit (minced fish filet speared onto fresh lemongrass stalks, roasted over a charcoal grill) and Lewang Gedang Udang (green papaya salad with prawn).
Chef Stefan says, “Cuisine plays a big part in any culture and the Journey of Gastronomy is the perfect platform for me to share my interest in Balinese cuisine. When guests leave Bali, they would hopefully have formed a better understanding of Bali through their interaction with the local community, the recipes and the techniques they have learnt.”
Before joining Alila Villas Uluwatu, Chef Stefan was Executive Chef at Shy Restaurant in Jakarta, which specialises in French haute cuisine. He was previously also a sous chef at Vemeer, a two-Michelin star restaurant in Amsterdam.
